No Bake, Grain Free, Strawberry & Peach Yogurt Bites
Guys, if you keep up with me and my blog, this post is going to sound pretty darn redundant. But, you know what? When you're as passionate about breakfast food as I am, who cares?
I will always standby the fact that I believe breakfast is the most important meal of the day, if done right. Meaning, your first meal is loaded with nutrient dense foods, proteins, and complex carbs. In doing so, you will set yourself up for a pretty productive day - both food-wise and energy-wise. You are technically "breaking the fast" of not eating for the x-amount of hours that you were asleep, so starting the morning off with a nutritious breakfast is really setting yourself up for a solid day ahead. If done wrong, like waiting until lunch or chowing down on that "healthy" processed sugar-filled oatmeal you love, you'll be craving processed and sugary foods until you pass out on your pillow.
Look, I'm no nutritionist, so take what I say with a grain of salt. At the end of the day, the most important part of nutrition is to listen to your body and do what is right for you. Some people feel their absolute best without breakfast, and that's okay. However, that definitely doesn't work for me, let alone the majority of people. So, to all my breakfast loving friends out there, this post is for you.
I'm always trying to come up with easy, yet unique and fun, meals that you can meal prep on Sunday and have on hand for a quick and healthy start to your day. We have my Egg Muffins, my Sweet Potato Egg Nests, and now these babies. These "no-bake", "grain-free", yogurt bites are every sweet lovers dream. I'm not the biggest fan of sweet breakfasts, but these puppies are made with tart greek yogurt and sweetened with just a touch of honey, dates, and whole fruits so the sugar bomb isn't too powerful.
And, just like most things I make, this is customizable. Use whatever fruit you want! Want to make it Paleo or vegan? Sub-in coconut yogurt and swap honey for stevia (or simply omit). Drizzle some nut butter or melted chocolate for a post dinner treat. Switch up the nuts to your taste and preference. The possibilities are endless!
For the base:
1 1/4 cup unsalted almonds
1 cup unsalted walnuts
1/3 cup sunflower seeds
1/4 cup unsweetened, shredded coconut
1 tbsp Coconut oil
3 tbsp unsweetened vanilla almond milk (or favorite non-dairy milk)
Pinch of sea salt
For the filling:
1 cup, divided, greek yogurt
2 tbsp, divided, honey
4 frozen peach slices, chopped (can use fresh)
3 frozen strawberries, chopped (can use fresh)
1. In your food processor, combine all dry ingredients for the base. Pulse a few times to combine, then add in milk and coconut oil. Pulse a few more times until dough-like, but still slightly chunky.
2. Spray a muffin tin lightly with cooking oil.
3. Grad a handful of the mixture and form into balls. Do this a total of 12 even times, and place each ball in a separate the muffin container.
4. Gently press down on the balls, molding them into the muffin tins, so they make "bowls." The mixture may not reach to the top of the muffin container, but that's okay!
5. Freeze the base for 1 hour.
6. Meanwhile, in two separate bowls and 1/2 cup yogurt and 1 tbsp honey. In one of the bowls, add the peaches. In the other, add the strawberries. Stir to combine.
7. Once base has set, remove from freezer and evenly divide the yogurt mixture into the 12 "nut bowls."
8. Place entire muffin container and freeze for another two hours. Once set, gently use a butter knife to remove the yogurt cups and freeze in tupperware. When ready to eat, simply remove and let sit for 10 minutes to thaw!
