Mom's Avocado Edamame Hummus
Its not very often you hear someone say, "I miss high school." In fact, its usually quite the opposite. Fortunately, I had a pretty stellar high school experience and find myself saying that quite a bit. Its not because I don't enjoy my life nowadays...but sometimes I truly think I'd trade in bill paying and weekly meetings for some 11th grade biology homework.
My 2nd semester of senior year I had a pretty sweet deal going. Being the morning person that I am, I was able to add a "zero" period (essentially a class that started before regularly scheduled first period) to my schedule, and had completed my final elective the semester before. Because of this, I only had 4 classes before noon and athletic practices didn't start until 3pm. That means, I, along with several friends, had 3 hours to kill in the middle of the day. Pretty sweet, right?
What did we do with these 3 hours in the middle of the day? We ate. Often.
Hey - when you're young and growing, riddled with energy, and playing sports every day, you need to eat.
When we weren't hitting up our favorite spots around town for lunch, my best friend and I could be found at my mom's house. Our go to was a whole wheat bagel with light cream cheese or cottage cheese, avocado slices, and lemon pepper plus whatever batch of homemade hummus my mom had made that week. Sometimes it was cilantro jalapeño, sometimes it was edamame jalapeño, and sometimes she'd throw an avocado in. Whatever the flavor of the week, you can bet that we were eating it, usually with crackers and carrots.
Mom's Avocado & Edamame Hummus is a combination of all of my favorite flavors from the batches my mom used to make. In all honesty, at this point it isn't really even hummus. More like a hummus-y, avocado-y, bean dip - but what kind of name is that?!
That's the beauty though of making your favorite food items homemade. You can be as creative as you want, adjust spices and seasonings per your taste, and just experiment until it works. You can let your "creative-hummus-flavor-freak-flag" fly. Whoa...
1 can garbanzo
1/2 can white beans
1 cup edamame
1/4 cup olive oil
2 tbsp sesame oil
1/4 cup cilantro
1/3 cup aquafaba (liquid from chickpea can) or water*
juice of 1 lime
1 garlic clove
salt and pepper to taste
*Adjust based on preference - I prefer my hummus a little thinner and creamier.
1. Add everything to the food processor except for the olive oil.
2. Blend on your processor's lowest level until completely blended.
3. Slowly add in the olive oil and continue to blend until smooth.
