Sweet Potato Egg Nests

Last night I began my Vote by Mail Ballot. I have an irrational fear of completing my ballot and mailing it in just slightly too late to have my vote not properly counted, so I'm starting early. I won't get into an obvious political discussion for this season because I despise arguing (and, let's be frank politics more often than not lead straight into screaming matches for most) and quite honestly, this election season is constantly surrounding us and I don't feel the need to add to the sadness we all feel. This is my corner of the Internet and I'd like to keep it as upbeat and welcoming as possible, despite political views.

What I will say is these ballot measures are really throwing me for a loop. This is technically my first time voting (I could have voted in the 2012 re-election but screwed up my registration because I was living in NYC at the time) and I'm definitely going back and forth on some of these. I like to think of myself as someone who can easily see both sides of almost any argument, and it's more likely that I'm stuck in the middle than passionately residing on the left or right. See, this is why I hate arguing - I (along with most humans) want to be right, but I can also see where I am wrong (damn you, logic). Part of me wishes I was more assertive in my choices. Being a little bit more passionate in my beliefs might help me confidently form my own opinions on matters in our world (as well is in my life).

It's not just politics and ballot measures that have me teetering on the edge of differing opinions. I'm a fairly easy going person, and sometimes that means I don't have strong preferences for day to day life. I really don't care whether we bike down to Venice today or hike to the Hollywood sign. Both are equally appealing, and I'd be happy doing either. If I had to pick a conversation that embodies me as a person it would be:

"Where do you want to eat tonight?"

"I don't care, I am up for anything."

"Sushi or Vietnamese?"

"Honestly, I'll eat anything without olives"

I am every couple's worst nightmare. But, in all honestly, I truly am a just "go with the flow," happy doing anything, kind of human. For me, strong opinions are few and far between, but when they do appear they are as strong as ever. And you will know, because I will talk about it constantly. What are a few things I stand firm on? Love equality, olives suck, gender equality, Joey is the best character on Friends, climate change is real, and breakfast is the most important meal of the day.

Breakfast is the most important meal of the day, no question. I understand everybody is different (here I go again...) and I'm not here to change anyone's stance on this, but it will take an extremely persuasive argument to convince me that I'm not better off starting my morning with something healthy and substantial than downing an espresso and counting down the minutes to lunch. I am the type of person that goes to bed dreaming about breakfast, whether it's Monday morning's avocado toast and fried egg, or Sunday mornings tough decision - homemade brunch or let someone else do the cooking? I love breakfast. So very much.

The biggest challenge I see for anyone who argues against this, is that Monday through Friday, there just isn't enough time to devote to a healthy meal first thing in the morning. I hear you. But, I don't believe in that excuse. There are so many on-the-go and quick options to jump start your morning (Egg Muffins, Homemade Granola Bars, Green Smoothies, etc). Hence, these Sweet Potato Nests. They are the perfect savory start to your morning. You can whip up a batch of these on Sunday night and have them ready to go all week. They also make a wonderful addition to weekend brunch. They are easy to make large batches of ahead of time and then reheat when friends or family arrive.

See? No excuses. Breakfast, I always have your back.

Serving Size - 12 cups


1 medium sweet potato

7-12 eggs (7 if scrambling, 12 if you want to crack individual eggs in the nests for over-medium)

1/2 tsp salt

1/4 tsp black pepper

1/8 tsp red pepper flakes

1/8 tsp garlic powder

1 tbsp olive oil

2 tbsp water or milk

1 avocado (optional)

2 green onions, chopped (optional)

hot sauce (optional)


1. Wash and peal the sweet potato. Grate using a large cheese grater* or chop and add to food processor to roughly chop to a rice like consistency.

2. Preheat oven to 400°.

2. Heat a non-stick skillet over medium heat, add oil. Once hot, add the chopped sweet potato, season with salt, pepper, and garlic powder. Cook for about 5-7 minutes, stirring frequently. You want the potatoes slightly under cooked, as they will continue in the oven.

3. Transfer the contents to a large bowl and let cool. Once cool enough to touch, evenly disperse between a well greased muffin tin. Depending on the size of your potato you may have leftover.

4. Use your hands to carefully press the potato mixture into the muffin tin, creating a cup. See photo below. Bake for 10 minutes, just to set the cups.

5. While nests are baking, scramble 7 eggs (give or take depending on size) with a little bit of water.

6. Remove the nests from the oven and evenly spoon the scrambled eggs into the nests. Bake again for an additional 10-15 minutes, or until eggs are cooked through.

7. Garnish with whatever toppings you like! I prefer green onions, avocado, and Cholula!
