Memorial Day Weekend in Palm Springs & Vodka Agua Frescas 2 Ways

Oh, how I love Palm Springs. I've been going to Palm Springs (Palm Desert, Indio, Rancho Mirage) on and off for years now and it never gets old. I would spend spring break throughout high school with my friends in Palm Desert, come out for weekends with family and friends to Rancho Mirage/La Quinta/Palm Desert, and now as an adult I'm drawn to Palm Springs.

I've always been a lover of mid-century decor, bright (yet minimalist) design and color, pineapples, gold accents, old school motels and aqua pools, cocktails, and the heat. Palm Springs is a mecca for all of the above, hence, my infatuation for the small city.

Lucky for me, Ricky's family paid a visit to the West Coast and opted to spend half of their trip in the desert heat (seriously, it was already 97). We spent Memorial Day weekend in a stunningly beautiful home set back in the mountains, drinking endless bottles of Rosé, eating delicious food (both home cooked and restaurant made), laying by (read: submerged in) the pool, and we even made it out to Joshua Tree one day. It was the perfect way to spend a long weekend- lazy and with a tan. Check out some of our photos below:

In between glasses of Rosé, I spent Saturday and Monday concocting adult-only Agua Frescas. These cocktails are the perfect blend of lightly sweet, refreshing, ice cold and won't give you the next day sugar crash.

Serving Size: About 4-5 cocktails

Watermelon-Mint

1 medium/large watermelon, rind removed and roughly chopped

5-6 shots of vodka

1/4 cup of mint simple syrup

mint for garnish

Pineapple Cucumber

1 pineapple, peeled and roughly chopped

1 cucumber, roughly chopped

1 lime, peeled

5-6 shots of vodka

1/2 - 3/4 of a 1 liter Seltzer bottle*

1/4 cup mint simple syrup

*Quantity of club soda depends on how much juice your fruit yields. Our juicer is on the last of it's days, and I wanted a more sparkling/refreshing drink, so I used about 3/4 of the bottle. This is up to your taste.

Mint Simple Syrup

1 handful fresh mint leaves (more or less depending on taste)

1/2 cup organic sugar - I used Sugar in the Raw, but feel free to use honey, cane sugar,

coconut sugar

1/2 to 1 cup water, depending on how sweet and thick you prefer your syrup. I used 1 cup.

*Simple Syrup is used in both drink recipes. If you are only making one, reduce the ingredients by half. Or, make both and reserve the leftovers for the next go around!

Instructions

1. Begin by making simple syrup. Combine water, sugar, and mint in a pot over low heat. Steep until sugar is dissolved and flavors combine, about 10 minutes. Turn off heat and set aside.

2. Juice watermelon. Pour into pitcher and combine with vodka and simple syrup. Top off glasses with ice and pour in juice. Garnish as desired and enjoy!

3. Juice pineapple, cucumber, and lime. Add seltzer and let settle, scoop off most of the foam on top. Add vodka and simple syrup, pour over ice and enjoy!
