Sweet Corn and Bean Salad

I'm always a huge advocate for variety in life, especially in regards to food. I love everything, and I like to experience everything that I love as often as possible (eloquent, I know).

However, I'm no stranger to the comfort of the familiar. I eat avocado toast with sriracha probably 4 out 7 mornings. I eat this corn and bean salad 1-2 times a week. I also watch at least 2-3 Friends episodes a day...

1/2 can white beans (I use cannellini), drained and rinsed

1/4 cup sweet corn (I use frozen)

1/4 medium cucumber, cut in half length-wise and diced

1 tbsp cotija cheese

1 tbsp olive oil

1/2 lemon juice

1/4 tsp garlic powder

1/4 tsp cayenne pepper (or less if you don't like spice)

pepper to taste

Notes: If you NEED salt, do not add until you are ready to eat, as it will make a very watery mess. I usually make this a few hours in advance to let flavors meld, and if necessary, add salt right before.

1. Combine white bean, corn (if you use frozen remember to defrost!), cucumber. Add oil, juice, and spices, toss to combine. Taste and adjust seasoning as necessary.

2. Mix in cotija cheese (feta is wonderful too!) and enjoy with pita chips or whole wheat crackers. *Cheese not photographed because I didn't have any :(

I usually enjoy this as is with whole wheat pita chips, however, if you want a heartier meal add chicked and serve with quinoa or brown rice.
